TGIF Flashback
So it's Friday and I couldn't be happier another weekend is upon us! I feel like you can't go a weekend without uttering the cliché phrase, "TGIF". Then I can't help but reminisce about what that phrase really meant when we were little. Fridays were the best days because it meant having a sleepover with my sister and 2 best friends so we could watch our favorite shows in the whole world. And still- to this day, these shows always hold a special place in my heart.

Dim Sum
We took a Dim Sum cooking class the other day. It was my sister, mom and grandma. The teacher was the cutest little asian lady who loved my grandma- they became best friends. haha the class was a blast! And we made amazing Potstickers, Phoenix Eye Dumplings, and Curry Puffs.
Look how cute they are! (My grandma is on the right.) The teacher's name was Rebekah Lin Jewell. She was hilarious!!
Pot Stickers:
1 1/2 lbs ground beef
1 tbsp ginger, minced
1 tbsp garlic, minced
2 teaspoons salt
2 tbsp soy sauce
1 teaspoon sugar
4 teaspoons cornstarch
2 tbsp water
3 tbsp water
3 tbsp sesame oil
1 1/4 lbs Napa cabbage
2 round packages of wonton wrappers or homemade wrappers (She taught us how to make our own)
Chop the Napa cabbage by hand or using a food processor. Squeeze the excess liquid from the cabbage. Set aside.
Filling: Put the ground beef, ginger, garlic, salt, soy sauce, sugar, and cornstarch in a large mixing bowl. Stir water into meat mixture gradually, then add chopped cabbage and sesame oil.
Making the dumplings: Place about 1 tablespoon filling into the center of each wonton wrapper. Fold and brush edges with water (or egg wash) to seal.
Cooking: Pan fry in 2 tablespoons oil until bottom turns brown. Then add 1/4 cup water, turn to low heat, and cook until water has evaporated (about 5 minutes). Uncover, add 1 tablespoon oil and let dumplings fry 2 minutes longer.

Here are our shrimp dumplings we shaped as "Shumai", my favorite!! These were steamed. YUM!
The Falletti/Wong women in the kitchen. Great family bonding time and perfect way to get in touch with our asian roots!!

Last day of summer
CPA
It's official. I am a CPA!!! After a loooooooooong year and 2 months of feeling guilty every single second I wasn't studying, I'm done!! What a weight off my shoulders.

H-O-K-I-E-S hokiessss
Going back to BLACKSBURG tomorrow! I can't wait. That little town will always be home to me.
And what is more exciting than HOKIE FOOTBALL?!
Here is a collage I put together. It makes for a great desktop background when you are sitting in front of your computer all day dreaming of rails at TOTS, crab dip at Sharkey's, Enter Sandman, Hokie Grill turkey sandwiches, tailgating at 8am with your best friends, driving around the drillfield, the empo (yes, I wish I could have studied for the CPA there), Lane Stadium packed with orange and maroon, and my all-time favorite- Sub Station!!

Newport Rhode Island
So we went to my cousin's wedding in Newport, Rhode Island last weekend. I just have one word- Gorgeous!!

And it doesn't hurt that my cousin Shannon and his new wife Robyn are in contention

And although the nearly 24 hour drive there and back with my parents and sisterwas rough, the lobster sautee roll was more than worth it! Huge chucks of lobstersauteed in butter on a roll... can't make a trip to New England without experiencing this dish!
Altogether, it was a pretty fun weekend! Traveling to new cities is always exciting.
